We fed close to 350 in Lakeview Park in Nampa Idaho. I was the Architect of the menu and Dustan the Meat and Au Gratins. Agri-beef and Simplot were the main in kind Food Sponsors and they really stepped up! <em><strong>Hey Steve</strong></em>, you wanna go cook for a work trail party in the White Clouds for a week? Me - Uh yeah. So it was decided and on to menu planning with Jeff Halligan, Executive Director of the Idaho Trail Association (ITA).<br />
<br />
The menu has to knock em down, shock and awe. One evening we are going to do Swedish Meatballs and another, Fried Rice and Egg Roll S'mores (recipe compliments of Craig Smith). All the recipes are out of my book (or the new book) and they have been trail tested. Man these guys drink a lot of coffee. <br />

The group that has volunteered are employees of the Idaho Conservation League led by one of the Advisory Board Members of the Idaho Trails Association, John McCarthy.<br />
<br />
Did I mention they drink a lot of coffee? The role of a backcountry chef takes on a different look with each group dynamic. The certainty is, there must be filtered water at all times for the work party as the work is hard and they must stay hydrated. The food must have horsepower and sustain the calories lost. Fresh fruit and vegetables are more difficult. They don't keep fresh. So, carb loading like Pasta, Rice, Potatoes is the plan.<br />
<br />
The new twist for me on this week long is I normally carry (with help) on my back to the destination. In this case we had heavy loads carried for us but some wonderful pack animals.<br />

We had French Toast and Argentine Style Poblano Peppers and Potatoes for breakfast. Plenty of banter, a couple of nice desserts and nobody left hungry.<br />

If you get a chance to volunteer for one of these work parties you wont regret it. It is a wonderful contribution to our backcountry and if it doesn't get done then the trails deteriorate and become impassable and wont be there for future generations.<br />

Witnessing first-hand the beneficial impact fly-fishing provided their friend, they created Reel Recovery to provide the same opportunity for other men battling the disease. Combining expert fly-fishing instruction with directed “courageous conversations”, the organization provides men with all forms of cancer a unique opportunity to share their stories, learn a new skill, form lasting friendships and gain renewed hope as they confront the challenges of cancer”.<br />

I was very fortunate to be able to help these folks out and the Mackay Idaho Retreat in July of 2015. I was honored to cook for the fishing buddies and help out where I could. Having seen my Dad fight (and lose) a long battle with Bladder Cancer for 25 years and losing my father in law to the deadly disease made me curious as to what they were feeling.<br />
<br />
I learned that the most common complaint about friends and loved ones is some of them, and in some cases all of them fade away from the person living with cancer. I heard that they felt treated like they had communicable disease. Their friends didn’t understand it or didn’t want to be around it.<br />

Listening to these courageous men put a punch to my gut. Is society mostly walking away from it and not giving their support? It breaks your heart. I felt so small like any of my troubles could compare to the emotional trauma caused by abandonment these men are feeling.<br />
<br />
I know, my blog is about camp food, and there was food like that prepared at this retreat. I didn’t see it coming, I felt good initially about going and helping and came home humbled, saddened by the stories of loneliness and battles lost. Also there is a ton of positives, the Reel Recovery organization is incredible. The day we left for our different places of abode was warm and joyful but also full of tears. I for one plan on not taking for granted that people living with cancer. I am going to be there even if it’s a small amount of my life.<br />

Stock up on high-quality hard cheeses like parmesan or romano, which can go unrefrigerated for extended periods of time. Brie does well on the trail and you can eat with crackers or spread over pancakes for a savory breakfast<br />

Invest time in menu planning.Based on your trip and your time in the wilderness,<br />
plan quick, low-effort meals and more elaborate day meals. Then plan some more<br />
meals, because being hungry won’t help you get back to the trailhead. Think about<br />
protein, food weight and depending on your mode of travel, think about which order you will<br />
eat your meals consider the weight, freshness, and variety. It’s the “At home<br />
preparation” that will make your meal planning a success in the backcountry!<br />
<br />
<strong>DELEGATE</strong><br />
If you’re traveling with a group, delegate someone to be a sous chef or a baker every<br />
evening until it becomes a habit. Find occasions that need to be celebrate. Get<br />
everyone involved in clean up, we don't wont those critters to come visit during<br />
our slumber.<br />
<br />
<strong>SHOW OFF!</strong><br />
Do something crazy, bake bread,smoke some fish. Make a cake and frost it! Eat better<br />
in the backcountry than you do at home. Biscuit mix that can be added to soup as dumplings,<br />
baked as biscuits, or saved for another meal. Onions and potatoes that can go in soup or<br />
be made into french fries and onion rings. Tortillas that can be eaten with peanut butter<br />
or fried into chips. Food can make the difference between a good trip and a tough one,<br />
allow your travel companions to be the beneficiaries of your wilderness cooking skills.<br />
<br />
<strong>GO WILD!</strong><br />
Catch a fish, learn to identify a simple plant or two for tea, or pick berries or wild onions.<br />
Something fresh will add much-needed spark to a longer trip.<br />
<br />
<strong>PREPARE, BE PREPARED!!!!</strong><br />
Try your recipes and meals at home first with the same equipment you will be<br />
using in the wilderness, if something fails let it be at home. Have a backup plan<br />
like GORP, granola bars, nuts or jerky. Even a pouch meal or two would be a good idea.<br />

dehydrated or freeze dried can be good, void of chemicals and robust
amounts of calories. They have their place and I am a cheerleader for their cause
now. Eliminate MSG and higher than needed amounts of sodium and have a strong
amount of calories, we all can benefit.<o:p></o:p></span></div>

was to cook 500 four ounce samples of an easy backpacking recipe from my book
all while showing off the new two burner camp cook stoves for Primus.</span><br />

rodeo bull. Its 1000 no 500? Which county do we need to get a food handler license
and temporary food booth permit.?We are going with 500 and when those samples

<span style="font-family: Calibri;">Curried Salmon Pilaf, a recipe from my book was going to be
served at Pineveiw reservoir in Utah. The weather, not cooperating, the wind
and rain came on with full force early mid-morning. While cooking with one
hand, we also needed to hold the tent down with our other hand. On an
interesting note we were cooking on the new Radiant two burner stove and they
were on for the entire Open Air Demo, through the rain and wind.<o:p></o:p></span></div>

<span style="font-family: Calibri;">Here they come, not expecting to be seeing Primus showing off
their product in use, the ETA Lite Stoves hung like Chinese Lanterns and two
guys shoving a good helping of rice in their face. Many smiles and “That’s
good, I didn’t expect it to be… “I don’t even like curry but this is good” was
released many times from the mouths of the buyers and vendors.<o:p></o:p></span></div>

food is moving and the day is moving on to the finish. A wonderful day with my
Primus Family which included Lars-Ola, Per and Eric all from Sweden. The Mad Scientist

cooking today just marketing of the book and networking. Got to visit with Dean
Lords. The Day one brought us a fiesta party with our other family Katadyn,
featuring a Mariachi band and samples of their new product “Alpine Aire Freeze
Dried Guacamole”. Additional highlight of this party was meeting Idaho Climbing
Legend pioneer Ray Brooks, who is a sales rep for Katadyn.</span><br />

to be doing a cooking Demo for Alpine Aire Foods of the Katadyn Family. Months
ago I was experimenting with some of the Alpine Aire foods pouch foods with the
goal of creating a more robust version of the meal experience. My first mark
was Clam Chowder. Potato Cheddar Soup? Yep, perfect Clam Chowder base. Doing
the demo at the Katadyn booth we felt like rock stars. We are graced by Wayne

They were curious about a possible collaboration with me and their organic low sodium freeze dried food offerings.<br />
<br />
My first attempt at a recipe was using their Creamy Potato Cheddar Soup. I immediately thought of Clam Chowder. Using a fresh potato, carrot and celery stalk with a canned clams makes this very easy to construct at camp. Using a freezer bag and re- using the empty pouch helps keep the clam can odors hidden from our critter friends.<br />

The ingredient list is:<br />

1 Packet of Alpine Aire Creamy Potato Cheddar Soup<br />
1 Potato<br />
1 Carrot<br />
1 Celery Stalk<br />
1 Green Onion for Garnish<br />
1 6.5 oz. can of Chopped Clams<br />
1/2 Tsp. Salt<br />
1 Tsp. Pepper<br />
1 Tsp. Tabasco<br />
3 1/2 Cups of water<br />
1 Gallon Freezer Bag<br />

Chop the potato and carrot into 1/4 cubs and add to the pot * Bring to a boil and cook for 8 minutes<br />

Then add celery and clams (and the juice from clams) and cook for an additional 5 minutes. When potato's and carrots are tender add the soup mix slowly stirring well, cut the heat and put the lid on for 12 minutes.<br />

The failures (bad clips) are costly, not having a way to view the clips and know if they work within the editing is frustrating. We have got some great advice and some not so great advise, everyone is very willing to offer up their ideas after the fact and that's ok, I asked their opinion. I just completed video number two and WOW, what a huge improvement in both talent and creativity and finished product. looks like I might be getting the hang of this... Wish me well!<br />

Backcountry stoves and fuel are light, reliable and support the "Leave No Trace" ethic. In many backcountry areas (especially here in Idaho), open fires are prohibited due to the forest fire danger or the scarcity of available firewood, so a stove is your only option if you want something warm or hot.<br />
<br />
For most backpackers, your main decision will be between the two categories: Canister fuel vs. Liquid fuel. Here is a look at the canister stove option (I like the best)<br />

A Closer Look: <em><strong>Canister Stoves</strong></em><br />
<br />
Canisters run on pre-pressurized gases: Isobutane (primary) and propane. Isobutane burns hot and clean, and in colder conditions it outperforms conventional butane . The canister self seals when the stove is detached, eliminating the possibility of fuel spills.<br />
<br />
Fuel canisters connect to stoves in 2 ways:<br />
<br />
<strong>Upright</strong>: The stove screws into the top of the fuel canisters. This is the smallest, lightest option. Downsides? Taller profile stoves tend to tip over: smaller stoves don't hold big pots and pans very well.<br />

<span style="color: #333333; font-family: "Verdana","sans-serif"; mso-bidi-font-family: "Times New Roman"; mso-fareast-font-family: "Times New Roman";"><span style="font-family: inherit;"><o:p></o:p></span></span> <strong>Low-profile</strong>: the burner sits on its own base and a fuel hose connects it to the canister. Canisters can be inverted to improve cold-weather performance; large pot supports pot stability. Cons? Its a bit heaver and bulkier.<br />
<br />
The biggest drawback is that upright canisters depressurize in the cold (32 deg. F or lower) leading to weak flame or no flame. Normal pressure resumes when the canister temperature is increased.</div>
<span style="font-family: inherit;">
<strong>Tip</strong>: In cold weather, keep the canister warm by putting it in your sleeping bag at night or hiking with it in your jacket pocket. Also, you could place a hand warmer or a bit of foam underneath it when cooking.</span><br />

<span style="font-size: large;"><strong>Food Transport Options</strong></span></div>
<br />
<ul>
<li><strong>Refrigeration</strong> is something you left at home. Thus fresh foods are good for about a day except maybe some vegetables and most fruits.</li>
</ul>
<br />
<ul>
<li><strong>Canned foods</strong> sometimes can find a way into your pack if the trip is short and you are craving those canned foods. We like throwing in cans of tuna and chicken and salmon, all of which you can probably find also in a foil pack. We use them in pasta and rice dishes. Skip cans that are in that 15 oz. range and forget about glass, you are just asking for trouble there.</li>
</ul>

<ul>
<li><strong>Dry foods</strong> (pasta, instant rice, soup mixes and drink mixes) are light, take up minimal room inside a pack and offer some excellent alternatives.</li>
</ul>
<br />
<ul>
<li><strong>Freeze Dried / Dehydrated foods</strong> have improved considerably in taste, texture and appearance in recent years. However you would probably not find any Freeze Dried. MRE or C-Ration in my camp. Been there done that , forget about it, I am not a fan but you might be. I would use these as more emergency meals.</li>
</ul>
<br />
<ul>
<li><strong>Spices </strong>can be crucial to boosting the appeal of backcountry food. Consider bringing your own spice kit which could include pepper, garlic powder or salt, basil, cayenne pepper, lemon pepper, cumin, crushed red pepper, cinnamon or whatever you enjoy from your home kitchen.</li>
</ul>
<br />
<ul>
<li><strong>Flavored beverages</strong> can be taste mighty refreshing after a few days of nothing but water. Powdered drink mixes are a nice mid trip treat.</li>
</ul>
<br />
<ul>
<li><strong>Backpacking cooler</strong>- I use those thermal bags you buy on the grocery store that keeps things hot or cold. sometimes freezer bagging great white bean chicken chili in a freezer bag (frozen solid) and put it in the thermal bag and store in the middle of your pack can keep it frozen all day long. Most backcountry ventures are in the mountain where temps typically don't get above 70 degrees in during the day and get somewhere south of 35 at night.</li>
</ul>
<br />
You need to be creative and you need to be careful how you store your foods considering your audience in the backcountry. Consider using bear bags or canisters and keep your food at least 200 ft. away from where you sleep. Remember, haul it all out!<br />

If I could sum it up in non technical jargon, GSI's stuff is simply the best on the planet. I have had the opportunity to cook outdoors all over world over the last 3 decades using various cookware and fuel source from Sterno in the 70's , Diesel in the military, open fire, white gas and ISO Butane. Cook until set (about 1-2 minutes), top with veggies, shredded cheese or whatever else tickles your taste buds, then fold in half and serve.<o:p></o:p></span></div>

A 3 year journey in which along the way I was fortunate to be introduced to Steven Siler, publisher of Smoke Alarm <st1:personname w:st="on">Me</st1:personname>dia, a Rock Star Publisher, Chef, Firefighter, a Southern Gentleman. <br />

The learning curve to be a cookbook author is hard, fast and furious, and that is just the warm up. Of course there is nothing to prepare you for this process, you just have to jump in and hold on. It’s like taking a really fast ride in a jeep down a mountain road, moments of exhilaration and smashing your head against the dash and ceiling.<br />
<br />
Minutes before the launch party the "rumor" is my book still might arrive. The night before, we learned that my books would not arrive until Monday (2 days late). Steven had made "sample books" and offered a gift card to the people that showed up expecting to buy a book and have me sign it.<br />
<br />
The emotional rollercoaster peaked when several characters from <st1:state w:st="on"><st1:place w:st="on">Idaho</st1:place></st1:state>'s Mountain Climbing Community arrived. (I named recipes after several of them and others when it was appropriate to do so) "Wow! this is really happening!" I really have great family and friends. These are my peeps, my network. They are not outwardly disappointed that the book wasn’t there , they had came to celebrate this journey with me.<br />

All who arrived received our In The Wild Chef t-shirt. It was exciting to witness a <st1:place w:st="on"><st1:placetype w:st="on">sea</st1:placetype> of <st1:placename w:st="on">Pistachio Green</st1:placename></st1:place> t-shirts with "Get a Little Wild in the Woods" logos flying around Sierra Trading Post.<br />

The veggies took just a minute to perfection. I then poured Sweet and Sour sauce (that I had made at home) over all the goodies and cooked it for one minute. </span></span></div>

In interviewing some High Altitude mountaineers, they all told that one of the most popular foods at Everest Base camp is French toast. </span></div>
